Easy Naan Bread
https://www.food.com/recipe/super-easy-naan-bread-350443
Ingredients:
1 1⁄2 cups warm water
1 tablespoon sugar
2 teaspoons active dry yeast
1 teaspoon salt
3 cups flour, plus a few tbsp for workspace
Ingredients:
1 1⁄2 cups warm water
1 tablespoon sugar
2 teaspoons active dry yeast
1 teaspoon salt
3 cups flour, plus a few tbsp for workspace
- Combine warm water, sugar, and yeast in a bowl. Let stand for 5 minutes until foamy.
- Add salt and flour. Mix thoroughly. Knead dough on a floured workspace about 20 times and form into a tight ball. Put dough in a well oiled bowl and cover with a damp towel.
- Put in a warm place to rise for 30-45 minutes. Dough won't rise much, but it doesn't need to.
- Turn dough out onto a floured workspace. Divide dough into 8 pieces and roll out with a rolling pin to about 1/8" thick.
- Grill naan pieces on a grill or electric griddle. In a pinch, a frying pan sprayed with some nonstick cooking spray will work. Grill for 1-2 minutes on each side.
Best Fudgy Cocoa Brownies
https://cafedelites.com/best-fudgy-cocoa-brownies/
Ingredients:
1/2 cup unsalted butter, melted and HOT
1 tablespoon cooking oil, (olive oil or coconut oil are fine)
1 1/8 cup superfine sugar, (caster sugar or white granulated sugar)*
2 large eggs
2 teaspoons pure vanilla extract
1/2 cup all purpose (or plain) flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
ED NOTE: I use a 9 inch square pan and do 375 F for 16.5 Minutes
Ingredients:
1/2 cup unsalted butter, melted and HOT
1 tablespoon cooking oil, (olive oil or coconut oil are fine)
1 1/8 cup superfine sugar, (caster sugar or white granulated sugar)*
2 large eggs
2 teaspoons pure vanilla extract
1/2 cup all purpose (or plain) flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
ED NOTE: I use a 9 inch square pan and do 375 F for 16.5 Minutes
- Preheat oven to 350°F (175°C).
- Lightly grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper (or baking paper); set aside.
- Combine hot melted butter, oil and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the eggs and vanilla; beat until lighter in colour (another minute).
- Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
- Pour batter into prepared pan, smoothing the top out evenly. (OPTIONAL: Top with chocolate chunks or chocolate chips.)
- Bake for 20-25 minutes, or until the centre of the brownies in the pan no longer jiggles and is just set to the touch (the brownies will keep baking in the hot pan out of the oven). If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.
- Remove and allow to cool to room temperature before slicing into 16 brownies.
Instant Pot Mushroom Stroganoff
https://www.feastingathome.com/instant-pot-mushroom-stroganoff/
Ingredients:
3 tablespoon olive oil
½ a red onion, diced
3 garlic cloves, rough chopped
16 ounces mushrooms, sliced (cremini, shiitake, button)
¾ teaspoon salt
½ teaspoon pepper
¼ cup cooking sherry (or sub white wine or more broth)
2 cups veggie broth
1–2 tablespoons whole-grain mustard
1 tablespoon flour
8 ounces uncooked pasta (rotini, penne) about a scant 3 cups (adding more will result in the burn error!)
Stir in after cooking:
½ to ¾ cup sour cream
Notes:
Instant Pot cooking times will vary depending on pasta. A good rule of thumb is to halve the cooking time on the pasta directions on the package and subtract one minute. For example, 9 minutes on the package would be 4 minutes in the pressure cooker.
Ingredients:
3 tablespoon olive oil
½ a red onion, diced
3 garlic cloves, rough chopped
16 ounces mushrooms, sliced (cremini, shiitake, button)
¾ teaspoon salt
½ teaspoon pepper
¼ cup cooking sherry (or sub white wine or more broth)
2 cups veggie broth
1–2 tablespoons whole-grain mustard
1 tablespoon flour
8 ounces uncooked pasta (rotini, penne) about a scant 3 cups (adding more will result in the burn error!)
Stir in after cooking:
½ to ¾ cup sour cream
- Heat oil on “sauté” function. Add onion, garlic, mushrooms, salt and pepper and saute 7-9 minutes or until mushrooms release their liquid.
- Add sherry wine, 2 cups broth, mustard and flour and stir well, scraping up any browned bits (to prevent burn error)
- Add the pasta, stir.
- Set instant pot to pressure cook on high for 3-4 minutes. (see notes)
- Manually release (placing a towel over the steam).
- Stir in the sour cream, and keep on warm setting for 5-10 minutes. Sauce will thicken slightly, but will remain “saucy” enough for dipping garlic bread. Taste, add more mustard if you like.
- Sometimes for extra depth, I’ll add a teaspoon of soy sauce in at the end, up to you.
Notes:
Instant Pot cooking times will vary depending on pasta. A good rule of thumb is to halve the cooking time on the pasta directions on the package and subtract one minute. For example, 9 minutes on the package would be 4 minutes in the pressure cooker.

Instant Pot Refried Beans
https://www.wellplated.com/instant-pot-refried-beans/#wprm-recipe-container-32677
Ingredients:
1 pound dry pinto beans (2 cups)
2 teaspoons extra-virgin olive oil
1 small yellow onion chopped into 1/4-inch dice
1 jalapeno cored, seeded, and finely chopped
3 cloves garlic minced (about 1 tablespoon)
4 cups low-sodium chicken stock or vegetable stock divided
3 cups water
2 bay leaves
1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/8 to 1/4 teaspoon cayenne pepper optional
For serving: queso fresco or shredded Monterey jack cheese diced tomatoes, diced red onion, chopped fresh cilantro, avocado (optional)
Ingredients:
1 pound dry pinto beans (2 cups)
2 teaspoons extra-virgin olive oil
1 small yellow onion chopped into 1/4-inch dice
1 jalapeno cored, seeded, and finely chopped
3 cloves garlic minced (about 1 tablespoon)
4 cups low-sodium chicken stock or vegetable stock divided
3 cups water
2 bay leaves
1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/8 to 1/4 teaspoon cayenne pepper optional
For serving: queso fresco or shredded Monterey jack cheese diced tomatoes, diced red onion, chopped fresh cilantro, avocado (optional)
- Place the pinto beans in a large colander. Thoroughly rinse them. Pick the beans over, removing any damaged or clearly misshapen beans and discarding them. Set the rinsed beans aside.
- Turn a 6-quart (or larger) Instant Pot to SAUTE. Add the oil. Once the oil is hot, add the onion and jalapeno. Sauté for 2 minutes, then add the garlic and let cook just until fragrant, about 30 seconds. Add a few splashes of chicken stock and scrape along the bottom of the pot to remove any stuck-on bits of food (this will prevent a BURN warning). Add the remaining stock, water, bay leaves, salt, cumin, oregano, cayenne, and the rinsed and drained beans. Lightly stir to combine.
- Seal the Instant Pot. Cook on HIGH (manual) for 45 minutes. When the 45 minutes of pressure cooking has finished, let the pressure release naturally for 25 minutes. Vent to release any remaining pressure. Carefully open the lid. The beans will be very liquidy.
- Discard the bay leaves. Reserve 2 cups of the bean cooking liquid in a bowl or measuring cup, then drain the remainder. Return to the beans to the pot. With an immersion blender (or by hand with a potato masher), puree the beans until they reach your desired consistency, adding some of the reserved liquid as needed. (You can also scoop the beans into a blender in batches and puree them that way—be sure to let the beans cool somewhat first so that they do not splatter). Taste and adjust seasoning as desired. Sprinkle with any desired toppings, serve, and enjoy!
Vegan Tikka Masala
https://www.noracooks.com/vegan-tikka-masala/
Ingredients:
FOR THE TOFU
2 (16-ounce) blocks extra-firm tofu
2 tablespoons olive oil
2 tablespoons cornstarch
1/2 teaspoon salt
FOR THE MASALA SAUCE
2 tablespoons olive oil
1 large onion, diced
5 cloves garlic, minced
1 tablespoon fresh grated ginger
1 1/2 teaspoons garam masala
1 1/2 teaspoons ground cumin
1 teaspoon turmeric
1 teaspoon coriander
1/4 teaspoon cayenne pepper
1 teaspoon salt
14 ounces tomato sauce
1 (13.5 ounce) can full fat coconut milk
1/4 cup water, as needed to thin the sauce
FOR SERVING
4 cups cooked rice, white or brown
chopped cilantro
Ingredients:
FOR THE TOFU
2 (16-ounce) blocks extra-firm tofu
2 tablespoons olive oil
2 tablespoons cornstarch
1/2 teaspoon salt
FOR THE MASALA SAUCE
2 tablespoons olive oil
1 large onion, diced
5 cloves garlic, minced
1 tablespoon fresh grated ginger
1 1/2 teaspoons garam masala
1 1/2 teaspoons ground cumin
1 teaspoon turmeric
1 teaspoon coriander
1/4 teaspoon cayenne pepper
1 teaspoon salt
14 ounces tomato sauce
1 (13.5 ounce) can full fat coconut milk
1/4 cup water, as needed to thin the sauce
FOR SERVING
4 cups cooked rice, white or brown
chopped cilantro
- Press the tofu: Wrap the blocks of tofu in paper towels. Place a plate or pan on top of the wrapped tofu, and put a couple of heavy books on top of that. Let the tofu press for 20 minutes. (You can skip this step if you get the super firm variety)
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Slice the tofu into about 6 slices (see photos in post above for reference). Now, rip each slice into medium-large pieces. You can also simply cut them into cubes, if you prefer, but ripping gives the tofu a great "chicken-style" texture for this dish.
- Add the tofu pieces to a large Ziplock bag, along with the olive oil, cornstarch and salt. Close the bag, and shake gently to coat. Arrange the tofu evenly on the prepared pan, and bake for 25-30 minutes, until golden and crispy.
- While the tofu bakes, prepare the sauce: Add 2 tablespoons of olive oil in a large pan over medium-high heat. Saute the onion for 3-4 minutes, then add the ginger and garlic and cook for 1 more minute. Add the spices, salt, tomato sauce and coconut milk. Stir until smooth and combined, then simmer for about 10 minutes, stirring frequently.
- If the sauce is too thick, add the 1/4 cup of water to thin. When the tofu is done baking, add it to the sauce and stir to coat the pieces.
- Serve hot with rice and chopped fresh cilantro, if desired.
Old Fashioned Pumpkin Pie
https://www.simplyrecipes.com/recipes/suzannes_old_fashioned_pumpkin_pie/
Ingredients:
2 large eggs plus the yolk of a third egg
1/2 cup packed dark brown sugar
1/3 cup white sugar
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground cardamom
1/2 teaspoon lemon zest
2 cups pumpkin pulp purée from a sugar pumpkin (see Recipe Note) OR 1 15-ounce can of pumpkin purée (can also use puréed cooked butternut squash)
1 1/2 cups heavy cream or one 12 oz. can of evaporated milk
1 good pie crust, chilled or frozen (see pâte brisée recipe or our no-fail flaky pie crust recipe)
NOTE: To make pumpkin purée from scratch, cut a medium-small sugar pumpkin in half. Scrape out the insides (reserving the pumpkins seeds to roast) and discard. Line a baking sheet with Silpat or foil. Place the pumpkin halves cut side down on the lined baking sheet and bake at 350°F until a fork can easily pierce them, about an hour to an hour and a half. Remove from oven, let cool, scoop out the pulp. Alternatively, you can cut the pumpkin into sections and steam in a saucepan with a couple inches of water at the bottom, until soft (strain before using). If you want the purée to be extra smooth, press the pulp through a food mill or chinois. Note, this recipe makes a generous amount of filling, enough for one homemade crust or two store-bought frozen crusts.
Ingredients:
2 large eggs plus the yolk of a third egg
1/2 cup packed dark brown sugar
1/3 cup white sugar
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground cardamom
1/2 teaspoon lemon zest
2 cups pumpkin pulp purée from a sugar pumpkin (see Recipe Note) OR 1 15-ounce can of pumpkin purée (can also use puréed cooked butternut squash)
1 1/2 cups heavy cream or one 12 oz. can of evaporated milk
1 good pie crust, chilled or frozen (see pâte brisée recipe or our no-fail flaky pie crust recipe)
- Preheat your oven to 425°F
- Make the filling
- Beat the eggs in a large bowl. Mix in the brown sugar, white sugar, salt, spices—cinnamon, ground ginger, nutmeg, ground cloves, cardamom, and lemon zest.
- Mix in the pumpkin purée. Stir in the cream. Beat together until everything is well mixed.
- Pour into pie shell and bake
- Pour the filling into an uncooked chilled or frozen pie shell. Bake at a high temperature of 425°F for 15 minutes.
- Then after 15 minutes, lower the temperature to 350°F. Bake for 45 to 55 minutes more. The pie is done when a knife tip inserted in the center comes out wet but relatively clean. The center should be just barely jiggly.
- (About half-way through the baking, you may want to put foil around the edges or use a pie protector to keep the crust from getting too browned.)
- Cool on a rack
- Cool the pumpkin pie on a wire rack for 2 hours. Note that the pumpkin pie will come out of the oven all puffed up (from the leavening of the eggs), and will deflate as it cools.
- Serve with whipped cream.
Bouquet garni: 2 bay leaves + a few sprigs each of flat-leaf parsley, oregano, and thyme, tied tightly together with kitchen twine
1 (15-ounce) can pumpkin puree (not pumpkin pie)
1/2 cup tomato sauce
Tofu Ricotta (makes about 2 cups)
1 14-ounce (400g) block extra-firm tofu
4 tablespoons (16g) nutritional yeast
1 cloves garlic, roughly chopped
2 tablespoons white or yellow miso paste
3/4 teaspoon onion powder
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly cracked black pepper
1 tablespoon extra virgin olive oil
15 fresh basil leaves (optional)
1 1/2 teaspoons freshly grated lemon zest
3 tablespoons freshly squeezed lemon juice (about 1 medium-large lemon)
- Select the Sauté setting on the Instant Pot and let the pot heat up for a few minutes before adding the olive oil. Once hot, add the onions and carrots and cook for 5 minutes, stirring occasionally, until starting to soften. Add the garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
- Add the vegetable broth to deglaze the pan, using a wooden spoon to scrape up any browned bits on the bottom of the pot. Select the Cancel setting.
- Add the lite coconut milk, chickpeas, lasagna noodle pieces, salt, pepper, nutritional yeast, and bouquet garni. Stir well to submerge the lasagna noodles. Using a spoon, scoop the pumpkin on top of everything, but do not stir or submerge to prevent burning.
- Secure the lid and set the Pressure Release to Sealing. Select the Pressure Cook (Manual) setting at high pressure and set the cook time to 4 minutes.
- While the soup is cooking, make the Tofu Ricotta. Drain the tofu and blot away the excess water with a few paper towels. For a smooth ricotta, crumble the tofu into a food processor. Add the remaining ingredients and blend until you have a creamy, smooth texture. Taste for salt, acidity, and cheesiness, adding more salt, lemon juice, or nutritional yeast, respectively, as needed.
- For a chunkier ricotta, place the tofu in a large bowl and break it into smaller chunks using a fork. Add the remaining ingredients and mix together until the consistency resembles ricotta cheese.
- Note: the ricotta can also be made a few days in advance and stored in the fridge.
- Once the 4-minute timer has completed and beeps, perform a quick pressure release by carefully switching the Pressure Release knob from Sealing to Venting.
- Open the pot and remove the bouquet garni. Stir well, add the tomato sauce and select the Sauté setting. Heat the soup for 2-3 minutes until the tomato sauce is incorporated and the soup has slightly thickened. Taste and adjust the flavor, as needed, with additional salt or pepper.
- Serve the soup in bowls and top each bowl with a few spoons of Vegan Ricotta Cheese and stir to combine. Store leftovers in an airtight container in the fridge for 1-2 days.

30 Minute Homemade Flour Tortillas
https://www.justataste.com/30-minute-homemade-flour-tortillas-recipe/
4 cups all-purpose flour
1 1/2 teaspoons salt
1 2/3 cups hot water
1/4 cup vegetable oil
NOTES
4 cups all-purpose flour
1 1/2 teaspoons salt
1 2/3 cups hot water
1/4 cup vegetable oil
NOTES
- Mixing the Dough: You must use very hot water, as in, as hot as your hands can stand. The water should not be boiling, however it should be very hot so that the dough comes together quickly and smoothly.
- Rolling the Tortillas: It’s important to roll all the way over the edges of the tortillas so that they are the same thickness all around. The goal is a super-thin tortilla that’s see-through before cooking.
- Cooking the Tortillas: Cook the tortillas for 30 to 60 seconds on one side before flipping them only one time and cooking them an additional 30 seconds. The goal is achieve slight browning in various spots as the tortillas puff and cook.
- In a large bowl, whisk together the flour and salt.
- Add the water and vegetable oil and using your hands, mix together the dough until it is a cohesive ball and all of the liquid has been absorbed. If the dough is too sticky, add more flour 1 tablespoon at a time, as needed. (The dough should be soft and Playdoh-like in texture, but not sticky.)
- Transfer the dough onto your work surface and knead it about 10 times until it becomes smooth all over.
- Divide the dough into 12 equal balls then flat each ball slightly into the shape of a hockey puck. Flour each piece of dough on both sides then set them aside and cover them with a towel.
- Heat a large nonstick sauté pan over medium-high heat.
- Roll out one piece of dough into an 8-inch circle then transfer it to the hot pan. Cook the tortilla for about 1 minute then flip it once and continue cooking it an additional 30 seconds or until golden brown spots appear on both sides. Transfer the tortilla from the pan into a towel and cover it while you roll out and cook the remaining tortillas.
